My son is old enough to make his own account, no longer needing to have a sub account to mine.  If he makes a new account will he be able to retain his game/trophy data?

No, It will be a new account. You should be able to turn it into a master though. But im not sure.

No.  If your son creates a new account, then it is a new account.  Nothing can be transferred from the existing sub-account.  Sub-accounts cannot be converted to master accounts either.  The current account will always be a sub-account, no matter how old the holder becomes.
