The server always run on PS3, so, there is no compilation on client machine (Windows, Linux or Mac). About the C# code, i don't know if it'll compile on Mac, but the C code should compile after some configuration.
The IDE i'm using to run the sample codes are Visual C#. I've tried Eclipse unsuccessful .

MonoDevelop looks like a possibility. Or maybe OpenTK.
The client code that's in the repository that's Linux and Windows... can't get that to compile yet, but it's close.
(Sorry, earlier I accidently refered to the client code as the server code)

I haven't finished yet. There are some problems, mainly with the UDP client. But almost all of the TCP commands are implemented (There is just a problem with TCP commands without payload, for example the pause_state command).
I need some help for the implementation, if anyone want to participate, contact me .
