During gameplay or movies my ps3 tends to freeze and continually makes loud noises, thoughts of overheating comes to mind but when I play things like 'black ops' there seems to be no problem, but I can't go one round of college football without freezing in the last 3 minutes of the 4th quarter, what should I do? And are there any problems?

Try deleting the game data and reinstalling.

What about movies? I watched a movie and was going to put in another one but couldn't even get past the first preview? What then?

Maybe the discs are dirty or scratched or maybe the lens is dirty.
