I'm going to say something that might be insane, but has some validity as well.
Big Daddy might be the PERFECT counter to EC.
Now, this sounds insane, but MANY of his moves cancel his level one, and some can even disrupt his level two before it goes if timed right. He can lay on pressure, and break through many of his moves, also stopping him from charging that punch in the first place. And he has more speed then people give him credit for; he can be right in your face before you are ready to block.

I might have to set out to prove my point then, because I've yet to have too many problems against the Coles. There's a good chance I haven't faced a really good one yet though.
And I still think if you could make a good approach, you could stop him from getting that punch charged in the first place.

First off the projectiles... EC sets up a literal wall between the two of you, often having a decent amount of meter before you even get to him. With that and tether he rapes Big Daddy at a range and can easily store up a punch before you ever get to him. The side square, shockwave and side circle allow him to pretty much go back to this long range game whenever he wants as well.
In close range, Big Daddy doesn't have a single safe on block move except maybe neutral square. This basically means that any time EC blocks anything, Big Daddy either gets comboed into a super or an AP burst. His main way of getting around with any sort of speed, Side triangle, both in the air and on the ground, gets punished by the Giga punch.
My mediocre FP does better in that MU by far.
EDIT: Yeah Alyas I think it's just not having played a good EC. I thought the same thing as you until I played Dabuz.
@Alyas_Hero Yeah bro don't ever give up your character though. This game is actually more balanced than people make it out to be.
I think its mainly the player. Like you said you hardly have a hard time with the Coles? But EC is seeming like a god right now. BUT looks who plays him.... Dabuz... who has experience in a game type like this competitively for awhile. Ofcourse a he's going to make EC look godly to a new community.

These are my best players in order FROM BEST TO WORST
Raiden
Dante
Nariko
Kratos
As you see my 2 best characters are
Raiden and Dante
But Dante is a slow swordsman but he is brutal
but
Raiden is both he is brutal and fast
So that is my idea.
