You have to put your Bluetooth in Discovery Mode by holding the power down for I think 3-5 seconds.
After that, have your phone go search for the Bluetooth.
If it ask for a Passcode, then it's most likely 0000

Well i dont have your headset nor your phone, but i do have a headset for my SE W580i.
I went to settings, went to connectivity, turned on bluetooth. Then i put the headset in pairing mode (read the manual), then i pressed handsfree and it asked if i wanted to scan, it scaned, found the headset, then asked for a password, the manual should tell you the password (normally its 0000 or 1234). Then press connect, and it should work.

I have the PS3 Wireless Stereo Headset, could it potentially work the same way? My phone just doesn't want to discover it.

The new headset doesn't use bluetooth.

both the headset AND the phone need to be in discovery mode.
