Bluetooth stereo output for Headphones. It would make life so much simpler when you wanted to play late but still want to hear the game without bothering others in the house. I know there are options out there and what not to achieve what im looking for. But it just would be nice to just be able to pair my wireless bluetooth headphones.
Is it even possible for sony to add this or is it a hardware issue?

it would be possible through usb... They have usb bluetooth connectors so all they would need to do is send the audio to the usb to feed to the bluetooth headset.
It would be a rather simple task, I've done it for my Computer for about $48 and a little knowledge in boards and bluetooth connectivity.

Not with Bluetooth. The PS3 will not output game audio through a headset. There is no reason why it would not be possible in theory, but I don't know how hard it would be on the PS3, or why Sony decided not to support it. You can buy a headset from Turtle Beach that will mix the game audio and chat in the same headphones, but they are not wireless.
