I just recently bought a new PS3 about a week ago, I have both a HDMI cable and HD cables as well. The menu's and UI's all look fine and and correct but whenever I go into any game and start playing the graphics and gameplay are very very poor, the best way I can explain it is if you are playing a computer game and your native resolution is 1920x1080 but the game is playing at 1024x768.. all the enviorments and chars have jagged lines nothing is smooth and the graphics look to be really low quality, I have tried uncharted, ssx, infamous and a few others and they all look really bad. I have tried messing around with the ps3 options but nothing worked and I tried messing around with my tv as well with the ratio's but that didnt help either, I have tried resetting the ps3 a number of times IE waiting for the 2 beeps then resetting the video settings. I am just not sure what else to do or how to fix this and its really strange that the menu's and UI's are really clean and look great but the games look like crap. I have had ps3's before and I know what the graphics/games should look like and this is not it. Also i did make sure that the 720, 1080p and i are all selected as well. Please any help or suggestions would be greatly appreciated!

I'm not sure from your description if you have a technical problem, or just inflated expectations. 1024x760 is approximately 720p. Many early PS3 games did not support FullHD graphics for performance reasons. Each game will display in its native resolution by default. If you look on the back of the game box it will usually list the resolutions that the game supports. If 1080p isn't on the list, then the game will display in a lower resolution than the XMB. That's not a problem with the PS3. It's a lot harder to render 3D gameplay in FullHD, than it is to render a fancy menu in FullHD. It took a couple of years for most studios to tune their game engines to the point where 1080p became widely supported.

You also didn't say what TV you are using and what features are enabled. If your TV has a "Game" mode turn that on for the HDMI port the PS3 is on. TVs tend to over-process images in their default mode, and this usually makes games look worse. Game mode turns off most of the TVs internal video processing, which will not only make the game look better, it reduces lag as well.
Also, some older HD televisions only supported 1080i resolution (no 720p), so if the game was 720p native, it would drop to 480p standard def. I'm pretty sure Uncharted was one of those games, and I believe inFamous was as well.
