PS Plus - game ratings

If I purchase Playstation Plus, am I able to filter out games rated M?   

Right now without PS Plus, I buy what games my son can play - however, I'm worried if I'll lose that control with PlayStation Plus and he'll be able to download the rated M games.

No.  PSN sub-accounts, which are the only accounts that minors are supposed to be using, cannot subscribe to Playstation Plus for exactly that reason.  Sony wants to be able to offer M-rated games to Plus subscribers, so they all have to be adults. If you subscribe to Playstation Plus with your own master account, then your son will not be able to download any of the games offered to Plus subscribers by himself.  You would have to sign-in to PSN, and download them yourself.  Just don't download any that are rated M, or otherwise don't seem appropriate for your son.
