I know you sneak behind the person, but mine is always red and I get caught.

Make sure that the hud says otherwise it's an instant failure

also make sure you have a decent sneak level

Does it mean fail if the words are red? I've never had a yellow and my sneak is 50+

Depends on the colour of your HUD but yes Red = insta-fail, it should say hidden in the same colour as your hp and ap bars

ok i'll look for that...sneak is at 62

Color has nothing to do with it. You just want the detection status to say "hidden." If it says anything else you will probably be caught. The words on the reticle that say "pickpocket X" are always red because it's an act of stealing.

I'm talking about (CAUTION) because I think the OP is talking about pick pocketing enemies.

Does your relationship with that faction matter? I'm about 3/4 of the way through the game, sneak is 62, and cant pickpocket people sleeping.

Nope that doesn't matter.

That's just the way it goes. Really all you can do is:

1. Make sure you are "Hidden"

2. Have a high Sneak skill.

3. Take small objects. ( Trying to take things like caps and keys is much easier than trying to take weapons.)

4. Save before attempting to pickpocket. That way, if you fail you can just reload and try again, no harm no foul.
