These are the absolute essentials in my opinion:

• Hitman HD collection
• Socom HD collection
• Final Fantasy HD collection(s)
• Morrowind HD remake
• Indago Prophecy HD remake

I will probably be one of the few people who would want the following collections, but I thoroughly enjoyed the games when I played them on the PS1 and PS2:

Pac Man World HD Collection:  Pac Man World 1, 2 and 3

Brothers in Arms HD Collection:  Brother in Arms: Road to Hill 30, Earned in Blood and Hells Highway

And on another note, I would also like to see an HD version of NFL 2K5.  There hasn't been a decent football game since that was released, IMO.

I might sound lame for proposing an HD collection for a series of movie tie-in games, but a Harry Potter HD collection would be very much welcome in my book.  The first 3 games, anyway; those were fantastic.  I would also say Kingdom Hearts, but everyone's already brought that up.
